Most everyone calls these "feast knives". They're actually every day use utility knives from Finland, called Emännänveitsi, or "hostess knives". They're made from one piece of steel, without wood or bone grips, so that the grips won't burn if left on a hot stove. One presumes the Finns either always had wet rags nearby, or had really tough hands.
